My Dinner


I got this from my vegetables garden. Not much but it's enough for me and my two DC's who likes to eat anything I eat. I got long/yard beans (sitaw), sugar snap peas, sweet potato tops (talbos ng kamote), and 1 okra. I saute them with olive oil, onions, garlic, tomatoes and a little bit of water. Then salt and pepper to taste, that easy. Enjoy.

My Favorite Seafood Recipe

Oh my goodness, my favorite seafood recipe? I like them all he he he. What is not to like with seafood? Ok, I know but don’t go there. As long as they are edible and nothing weird with the recipe I will eat them. My husband and I always go to this restaurant by us, they have "all you can eat seafood buffet" for a good amount of money. They have everything including lobster.

But I like a combination of everything. And I would say that my favorite recipe is the seafood medley. They have a lot of ingredients so bear with me.

SEAFOOD MEDLEY

Ingredients:
20 baby squid (tubes and tentacles), cleaned
3 cups milk

2 tablespoons extra-virgin olive oil
8 cloves garlic, minced
2 small onions, chopped
2 large carrots, chopped
2 tomatoes, chopped
1 small fennel bulb, diced
1/2 cup tomato paste
1 cup dry white wine
3 cups chicken stock
1/2 bunch fresh parsley
1/2 bunch fresh tarragon
1/2 bunch fresh thyme
2 bay leaves
1 teaspoon black peppercorns
1 tablespoon loosely packed saffron threads

2 tablespoons extra-virgin olive oil
6 cloves garlic, minced
1/2 cup oil-packed sun-dried tomatoes, drained and cut into strips
6 baby fennel bulbs, halved
1/2 bunch fresh thyme, chopped
10 fresh oysters in shells, well scrubbed
20 littleneck clams
20 fresh mussels

6 (6 ounce) fillets fresh sea bass
salt and pepper to taste
2 tablespoons extra-virgin olive oil
6 sprigs parsley, for garnish

Directions:

  1. Soak squid in milk for 1 to 5 hours; the longer the better. When the squid has finished soaking, strain, and discard the milk.
  2. Heat 2 tablespoons olive oil in a large pot over medium heat. Stir in the garlic, onions, carrots, tomatoes, and diced fennel. Cook and stir until the vegetables soften, about 10 minutes. Stir in tomato paste, and cook an additional 10 minutes. Pour in wine, and increase heat to high. Once the mixture comes to a boil, add the chicken stock, parsley, tarragon, thyme, bay leaves, peppercorns, and saffron. Return to a boil, then reduce heat to medium, and simmer until the liquid has reduced to 1 1/2 cups, about 15 minutes. Strain out the liquid, and discard the solids.
  3. Heat 2 tablespoons olive oil in a large pot over medium heat. Stir in garlic, and cook until fragrant, about 45 seconds. Add sun-dried tomatoes and fennel; cook for 2 minutes. Pour in the strained saffron broth and chopped thyme; increase heat to medium-high and bring to a boil. Place oysters on top of the fennel, cover, and cook for 1 minute. Set the clams and mussels into the pot, cover, and cook until the shellfish begin to open, about 4 minutes. Stir in the drained squid, recover, and cook for 1 minute, just until the squid firms.
  4. While the shellfish are cooking, season the sea bass fillets with salt and pepper. Heat the remaining 2 tablespoons olive oil in a large skillet over medium-high heat. Place fish into skillet, skin-side down. Cover, and cook until the skin is crispy and the flesh of the fish has firmed and is no longer translucent.
  5. Pour the fennel-seafood mixture onto a serving platter and place the sea bass fillets on top. Garnish with parsley sprigs and serve.

Vegetables Garden

Here are tomatoes, long beans, and okra. I would add more pictures later. My okra leaves are being getting eaten by Japanese beetle. I can't spray it with anything because I don't want pesticide in my vegetables. I also have sugar snap peas, corns, sweet potatoes, pumpkins, bell peppers, and gourds.

Exhausted

I feel like I brought all the worst vibes to myself. My instinct is working over time and I reacted from it. Now it's my fault that I reacted. Am I suppose to ignore and let it bug me forever. I thought communication is the key but with me shutting up is the key from what I gather.

Why others can manipulate things and can make me believe that maybe it was only me. That I should not react according to my instinct. Hey, if I did not see anything peculiar, this will never happened.

I'm tired, I can't do this anymore. Maybe I expect too much in life and I should expect less from now on. Be numb with everything.

My Dream Job

I was thinking about being a scientist and such, but why stop there. My dream job is being the president of United States. I will get rid of so many organizations that are not needed. Starting with the IRS, the federal reserve, and social services. And I will Abide the Constitution of our country words for words.

I would wake up the whole United States by letting them watch the other side of the story. That the patriotic act and national I.D. does not protect us, but are made to control us. There are so many things wrong in our country and doing my dream job will change a lot of things in restoring our republic and the future of our country.

How Nice

I went out to get some milk without telling my DD. She saw me and his youngest brother left asking me where I am going while I'm driving away. I don't really want to tell her where I was going when getting some milk because she always wanted to come. But I need to make sure I bring one of them. It's not her turn today that is why I did not let her know.

Anyway, when I got home she have some flowers for me. She even put them in the water. She was probably wondering why I didn't take her with me and got me flowers just in case I was mad at her...(laugh). But as soon as she saw me with the milks, she understood.

BTW, we have to go somewhere else to buy milk, because we drink raw milk. I don't buy the milk they sell in the store even if they are organic. Yes they are organic but they are homogenized, that means they killed everything that are bad and good for you in it.

A Little Cold

It's actually a colder than usual yesterday and today. My DC's and I are in the pool everyday except when it's raining. But when the weather is cooler we don't like to be in the water. Specially when its windy outside.

We did tried to have fun today in the pool but it is windy and and cooler. I think it was the shortest stay we have done in the pool since we got. The water was a little higher than before but it is cold plus the sun wasn't shining. Maybe we'll get a better temperature tomorrow. Who knows.

Entrecard And SezWho

Why is it every time I wanted to drop 300 a day entrecard always log me out. I had to log in so many times which is very annoying. I drop on one and it tells me that I have to log or better yet entrecard is telling that I need to get a card.

And added to that ever since they launch SezWho, all the sites who subscribe to it seems slower than usual. I watched the sites loads and they always get stock at "SezWho's loading".

Actually both sites crashed last week And I couldn't drop on EC for 2 to 3 days. What a pain.

We Stayed Home

It was very hot yesterday and we decided to stay home for the weekend. Our plan was to visit the old fashion farm at New Hope but we figure that my FIL will not like to walk around with the heat.

We were in the pool most of the time. DH finally enjoyed the the water, I think it was the first day that water in the pool was just right for him. It feel like the same temperature as my body. I kinda like it a little cooler to cool my body down. We only have a window air conditioner and soaking in a cooler water for hours help my body cool down and not to worry about turning the cool air inside the house.

But hey, it's still better than no pool at all. How about you, how do you cool down in the summer?

Have you heard of this, OPEC (Organization of Petroleum Exporting Countries) is spreading misleading information about biofuels in attempt to stop domestic energy production? I am for any alternative energy, you all know that, even hydrogen fuel. And I wish the government would stop meddling with citizens who are trying to find alternative source of fuel. With the price we are paying now I would like to use other than gasoline, don’t you? See the World Biofuels Industry Open Letter to OPEC. I don’t think its right that the oil cartels are the only one allowed to sell fuels. We should have an open market. I believe having competition brings the prices down not up, like what is going on right night.

Ding Dong Ding Dong

I can always hear our neighbors’ grandfather clock at my parents’ house. We only have one wall clock at home and you can’t see or hear it if you are outside the house. So we rely on our neighbor to tell time while outside. They have such a big house that I think they needed to hear the time where ever they are in the house. It looks like one of Howard Miller grandfather clocks but it was huge. But again I was young and small then. Everything looks big to me those days…ha ha ha.

We have a small house right now and I think having such a big clock will not go very well. I always wanted one, I enjoyed listening to “ding dong” sound every hour when I was little. Wish Granted

Have you heard the phrase "be careful on what you wish for because you might get it". Yeah, I did and here I am darker that I can imagine...(laugh). I was popular in school back home because I have a lighter skin, (thanks to my father side of the family). Everyone that I knew was jealous of my color. It comes with jokes and tease from others who are wanna be me. Others are mad and made my grade school days like hell. The only time I get a break was evenings, weekends, holidays, summers or simply when the person who teases me is sick. Come to think of it she is probably a lesbian. Most of the time boys are the one who does it, 99%. Now I realize after my DH explained to me about teasing that they do it because they like the person.

Eeww, and I believe she is not married yet. Be the way you are but once you cross the line with me ah ah, that is not acceptable. We can be a good friends but nothing more than that. Do not tell me you like me that way, that will definitely end the friendship.

Healthy Vending At Schools


I have a very picky eater seven years old son. He never buys food in school because he doesn’t like them except for cookies that they sell. His teacher actually had to speak to my husband about his eating habits. She suggested that maybe we can add some peanut butter sandwiches with his lunch. Hey, if the kid will not eat it at home, why do you think he will eat in school? I was right he never touch it. There are times that I want him to buy food when they have macaroni and cheese and chicken tenders on the menu. That very first time of buying food in school he came home with a cookie. I told my husband that they have a problem about his lunch food from home but they don’t have any problem when a kid eats junk food in school. Can you tell I don’t like schools?

Freedom March @ Washington DC (2)


We were there, I have the same picture of the banner in 1:33 and the people after that until 1:40 was in my meet-up group. We came at the same bus. We try not to be in so many photos, trying to lay low for the sake of our kids. But we were there, Dr. Ron Paul walked by me, too bad my camera wasn't ready. But I did tried taking his picture when he was leaving. His the same size as my DH and guards are bigger than him. To make the story short I only got a picture of the guards but not him.

DH told me that he looks very tired. I guess he attend so many functions that he doesn't have time to relax or go on vacation. If he will lead us to victory over our corrupt government he better learn how to relax.

Freedom March @ Washington DC

It was very hot, I got darker again...(laugh). The driving down wasn't so bad, our meet-up group rented a charter bus. It was a boring ride but relaxing and we don't have to worry about finding a parking spot.

Myself, DH, Vince and our friends daughter.

I like the whole thing, specially when Dr. Ron Paul showed up. He actually walked by 3 feet away from where I was standing. And I was the first one who notice him. Too bad my camera wasn't ready when he passed by. I couldn't take his picture leaving either because he is the same size as my DH and the guard was around him when walked pass me when he left. I got the shot of the guards but not him. But I have a few of him while addressing the our fellow revolutionaries.

Time For Upgrade

Global Warming & Such

This my answer to the comment I got from the post below and for all the environmentalist who will read this.

I hope you are not getting your information about global warming from the news media or the environmentalist sites. No doubt that is what they want you to know. Please research both side to know if there is really global warming or just a scare tactics of yours and mine/my government. I know for sure that there is global warming but I am not blaming it to only one source. And I'm not even sure if the sources that I know are the real reason. Or just simply our planet is old.

And you know what, I was born when there are no dinosaurs alive, and guess what I here typing this. I am not a tree lover and such, mankind will develop something in replace of that. As long as the government will not suppress it from public we'll be just fine.

But I can tell you that I am for constitution, organic, raw milk, free to bear arms, homeschooling, amongst other things and I want my freedom to do whatever I want in my property/house and to decide what is wrong or right for my family. I don't need the government to interfere with my daily life.

Law abiding citizens should not fear their government. But that is not the case anymore. Police can stop you for no reason, because they can. Government can spy on individual, because they can. Because apparently the bill was pass without the knowledge of congress or better yet the citizens. Where is it going to stop? They just take whatever they want.

Everything that are happening makes me so mad. That is why I'm going to Washington D.C. this Saturday to protest "ENOUGH ALREADY" we want our old government back. The Government that is base on our Constitution, that everyone who doesn't care in this country had already forgotten.

DO YOU KNOW WHY OUR FOUNDING FATHER MADE THE "CONSTITUTION"? DO YOU? I bet only a small percentage know the answer.

On March 11 a new documentary was aired on French television. It is a documentary most Americans will never see, explaining how the gigantic biotech corporation Monsanto is threatening to destroy the agricultural biodiversity which has served mankind for thousands of years.

For millennia, farmers have saved seeds from season to season. But when Monsanto developed GM seeds that would resist its own herbicide, Roundup, Monsanto patented the seeds. For nearly all of its history the United States Patent and Trademark Office refused to grant patents on seeds, viewing them as life-forms with too many variables to be patented. But in 1980 the U.S. Supreme Court allowed for seed patents in a five-to-four decision, laying the groundwork for a handful of corporations to begin taking control of the world’s food supply.

Since the 1980s, Monsanto has become the world leader in genetic modification of seeds and has won 674 biotechnology patents, more than any other company. Farmers who buy Monsanto’s Roundup Ready seeds are required to sign an agreement promising not to save the seed produced after each harvest for re-planting, or to sell the seed to other farmers. This means that farmers must buy new seed every year.

Monsanto puts pressure on farmers, farmers’ co-ops, seed dealers, and anyone else it suspects may have infringed its patents of genetically modified seeds. To do this, Monsanto relies on a shadowy army of private investigators and agents. They secretly videotape and photograph farmers, store owners, and co-ops. They infiltrate community meetings. They gather information from informants about farming activities.

Some Monsanto agents pretend to be surveyors. Others confront farmers on their land and try to pressure them to sign papers giving Monsanto access to their private records. Farmers call them the “seed police” and use words such as “Gestapo” and “Mafia” to describe their tactics.

Family Outing

Yesterday my DH decided to take us to the park to watch fireworks. I didn't have any picture because I was worried I was not going to be able to take some. I will be running around after the 4 little ones.

To my surprise they all behave rather nicely just a little whining before the fireworks starts but other than that, the night went pretty well. I always expect the worst every time we all go out to get myself ready. Because if I don't condition myself before the event I turn into this evil mother that no one wants to be around with (laugh).

They enjoyed the fireworks show specially my youngest one who turned two years old a week ago. It felt good when every thing turns out fine.

Independence Day

Since today is supposed to be Independence Day I will add some notes from Dr. Ron Paul about personal freedom and the internet.

"The most basic principle to being a free American is the notion that we as individuals are responsible for our own lives and decisions. We do not have the right to rob our neighbors to make up for our mistakes, neither does our neighbor have any right to tell us how to live, so long as we aren’t infringing on their rights. Freedom to make bad decisions is inherent in the freedom to make good ones. If we are only free to make good decisions, we are not really free.

Socialist ideologies blur this line between self reliance and government control because the mistakes of the individual are spread to everyone else. Thus the government becomes very interested in your decisions and way of life, with the justification that you could make a mistake others will have to pay for. The end result is, of course, that everyone loses privacy and control over their own lives. Whether they realize it or not, they are no longer truly free.

This week in Congress brought some examples from both sides of the aisle on these issues of freedom and personal responsibility. We talked about online gambling quite a bit with the markup of some legislation dealing with the Unlawful Internet Gambling Enforcement Act. Now, I am not someone who enjoys throwing money away, but I am someone who understands issues of freedom and self-ownership. As such, I strongly support the right of free people to do with their hard-earned money as they please. Gambling is ultimately a matter of personal choice, and some people find it entertaining. As long as I am not forced to underwrite their losses, it is none of my business what gamblers do with their time and money.

There are those that feel online gambling is morally wrong and financially irresponsible, which I do not argue with, but they also feel that because of this, the government should step in and prevent or punish people for taking part in these activities. This attitude is anathema to the ideas of liberty.

However, most of the same anti-gambling crowd sang an entirely different tune when we discussed giving away free birth control in schools. All of a sudden, they did not want others making decisions about their lifestyles and families, while the other side felt the need to interfere. It is interesting that the same group that feels parents have the absolute right and ability to control how and when their kids get birth control, are powerless to monitor their internet activity and must enlist government regulatory assistance to protect against gambling or predators. Which is it? Are parents the ones to parent, or not? Both sides switch their positions based on the subject at hand, but the philosophy of liberty is elegantly simple and consistent.

I can assure you of this – once the government gains a foothold into regulating the internet, even for benevolent reasons, the wonders of the free internet will soon be a thing of the past. Parents, with modern day technology, are quite capable of monitoring their children’s internet activity. The internet must remain a government-free zone to maintain its integrity and usefulness to modern society, and that is something for which I will continue to fight.

Think about it and apply to self. Unless you are a lazy bastard who doesn't care about others and the future of this country so be it. You are not worth educating about our government.

Foot Wears


This was exactly the type of work boot I've used when I worked in the restaurant. I love it specially the outsole which is oil resistant. If I don't wear something like this,I think I would had been in many accidents. And I am pretty sure my company will not appreciate that.
Now this boots is what my husband wears. He works outside and can’t get away wearing just regular boots. For his protection he needs a steel toe, waterproof boots, full grain leather and the outsole won’t track mud. I hate it when he walks in and bring everything he step on outside. Slice Bread

Are you having hard time locating slice bread with all natural ingredients at your local grocery store? (no high fructose corn syrup (HFCS) and (PHO/FHO) partially or fully hydrogenated oil

It took me a lot of reading before finding them.

  1. Arnold Natural 100% Whole Wheat
  2. Pepperidge Farm 100% Natural (they few choices like; whole wheat, 9 grains, german dark wheat, honey flax, and sprouted wheat)
I know there are a lot more at your local organic store but this is for people like me to buy everything at one stop. Specially with the fuel prices these days, I rather do it in one place. But if my local grocery store don't have this breads I don't have any choice but to drive and find one.

As of now, I still can't find hot dog and hamburger buns that are made with all natural ingredients. I don't really check my local organic store, I'm scared of seeing the prices on them. I know, health should come first but I am cheap. If I can get it for less why should I pay full price?


And the best thing to do is make your own bread. I do make my own dinner rolls (pandesal) once in a while. I should try experimenting with honey instead of sugar as the sweetener for my home made rolls. And maybe trying to make my own slice bread too. I don't have a bread machine and having 4 little ones is not easy either. Making bread is hard work. Anyway here is my home made dinner rolls, Pandesal as we call it back home.

"I'm a Research Associate in the field of Child Development and Human Relations. I have a continuing program of research (What mother doesn't?) in the laboratory and in the field (normally I would have said indoors and out). I'm working for my Masters, (the whole darned family) and already have five credits (four sons & one daughter, 1 joined the working community, 4 were educated @ home ). Of course, the job is one of the most demanding in the humanities (any mother care to disagree?), and I often work 14 hours a day (24 is more like it). But the job is more challenging than most run-of-the-mill careers, and the rewards are more of a satisfaction than just money."
